They [amazon] certainly have a very long list, but it's far from being complete - there are many vegetarian and vegan books that they don't stock, including Australian books, and I'd be failing if I didn't give them a plug.
There are several, but if I had to choose one, I'd recommend the "Vegan Kitchen Mate". It's produced on behalf of the Vegan Society (New South Wales), compiled by David Horton, and has the advantage of being cheap (retails at A$7.95, about four quid) and basic. Our customers don't go for expensive glossy coffee table books. It sells regulaly and well.
