Dr.
Campbell is the J.G. Schurman Professor of Nutritional Biochemistry
at Cornell University. He is currently the Project Director of the
China-Oxford-Cornell Diet and Health Project, a multinational project
responsible for nationwide surveys of diet, lifestyle and mortality
in China. He studies the effects of nutrition on long-term health,
particularly on the causation of cancer.
During a speech at the 34th World Vegetarian Congress
in Toronto, Dr. Campbell said, "We cannot talk about biology...nutrition...health
separately... Everything we see...clearly is pointing to plant-based
foods as a way of maintaining health."
