Chickpeas with 'Sausage'
Recipe by Margaret and Reba, presented at the Club on 3 Feb 2000.
- 2 cans drained chickpeas or home cooked equivalent
- 1 packet cooked Quorn sausages (NOTE: not vegan -
vegans use an alternative)
- 1 small onion, finely chopped
- 1 tsp Herbes de Provence
- 2 tsp dried parsley
- 1 Tbsp oil
- 1 Tbsp lemon juice or wine vinegar
Cut each sausage into four. Mix all ingredients together. Serve hot
or cold.
