Ethiopian Cholent

A very spicy lentil stew. All of the ingredients (except the berebere mix) are easily varied- that is,

SERVES 3

  • 2/3 ounce berebere mixed spice
  • 15 ounces lentils
  • 1 ounce stewed tomatoes
  • 12 ounces low-fat tofu (Mori-Nu brand)

Put ingredients in crockpot.

Cook in crockpot.
