- Take a classic Morrocon stew, put it in a pumpkin, bake and
enjoy. Easy but novel and impressive.
- 1 whole pumpkin - approx 12 inch diameter
- 1 large onion - chopped
- 4 garlic cloves - minced
- 1/4 cup olive oil
- 1 teaspoon thyme
- 1 large potatoe - cubed
- 1 cup green beans - broken into 1 inch pieces
- 1 red bell pepper - diced
- 2 cans vegetable broth
- 1 jar marinated artichoke hearts (6 or 8 oz)
- 1 lemon for juice
Cut a 4 inch hole around the stem of the pumpkin. Remove the strings
and seeds. Set aside. Sautee the onions in the oil. Add all other
ingredients (except the pumpkin). Bring to boil and then simmer
for 15 minutes. Spoon or pour the stew into the pumpkin as it sits
on a shallow baking dish. Put the lid on the pumpkin. Coat the outside
of the pumpkin with oil. Bake at 350 degrees for one hour. Let everyone
admire the dish before peeling the pumpkin (just the thin outside
skin), dishing out some stew and cutting up the flesh and adding
to the stew.
This makes enough for 6-10 people depending on the size of the
pumpkin.
