Vegetarian Chili

- 1 green bell pepper
- 1 onion (yellow, medium)
- 1 cup carrots, shredded
- 2 cans black beans
- 1 can kidney beans
- 1 cup sweet corn (frozen)
- 2 cans diced tomatoes (16 oz)
- 1-2 pkts chili seasoning (packets of dry powder)(get "hot"
if you like spicy)
- 1/2 cup vegan 'cheddar cheese' (optional)
Put all ingredients in a large pot, take 1/2 the mixture out and
blend, combine back into pot. Let simmer for 1 hour, stirring frequently.
Add 'cheese' in the end if desired. Top with vegan 'sour cream'
and serve, by itself or with tortilla chips.Enjoy!
