Mushrooms

For each person:
- 100 g (1/4 lb?) mushrooms
(I use a mix of fresh shiitake, maitake, and similar Japanese
types,
but this makes even cultivated buttons taste good,
so it'd be interesting to experiment with other types)
- 2 tsps dark soy sauce
- 1 or 2 tsps Chinese-style sesame oil
(not the bland non-toasted kind)
- 1 Tbs or so finely chopped green onion
(or coriander? Other herbs?)
Cut the mushrooms into big chunks if necessary
(note that they'll lose some bulk during the cooking)
and place in a covered microwave-able dish together with the soy sauce
and sesame oil.
Zap on High for a suitable time
(e.g., 3 minutes at 600 W for two helpings in a pyrex dish),
until the mushrooms are wilted and juicy, but not mushy.
Remove lid, add green onions, stir around,
then replace lid and let the flavours get well acquainted with each
other for a couple of minutes.
Serve as part of a Chinese-style meal (one dish per diner, plus
one for the table, with plain white rice and soup).
The juice soaks into the rice deliciously....
