Vegan Chinese/Stir Fry Recipes

1 large cucumber
1 tbsp sugar
1 tbsp white wine vinegar
Peel cucumber, split in half lengthwise, then slice.
Sprinkle with salt, cover and place in the fridge for 30 minutes.
Drain cucumber juice into a bowl, add sugar and vinegar and mix until
the sugar has dissolved.
Add pepper and lemon to taste.
Pour liquid over the cucumber and garnish with mint.
