Tofu Pie

- 1 prepared graham cracker crust
- 20 ounces soft silken tofu
- 8 ounces semi sweet vegan chocolate chips - reserve 1 tablespoon
for garnish
- 1 cup honey style sweetener
- 1 /4 cup brown suger
- 1 teaspoon vanilla extract
- Whipped topping optional
Melt chocolate chips in double boiler or microwave.
Place tofu, sweetener, sugar and extract in food processor or blender.
Use pulse button and pour melted chocolate while machine is running
Blend until smooth.
Pour into pie crust.
Sprinkle with chocolate chips and chill one hour.
