Frozen Tofu

(A fresh, frosty & fruity way to eat tofu!)
- 1 box Mori Nu Silken Tofu, soft, lite
- 6-8 strawberries, large
- honey to taste
- 3-4 bananas, very ripe, peeled, frozen solid
- 3-6 T. juice, your choice of flavor
- 1/2 t. vanilla
Peel bananas before freezing.
Divide ingredients and in a blender doing 2 separate batches,
puree until smooth all ingredients adding juice as necessary to provide
liquid for easy blending.
Puree until very thick and smooth.
The more banana added to the mixture, the thicker the mixture will
be.
Serve immediately in a dessert bowl if thick or in a glass if thin.
May also be frozen hard in popsicle molds.
Tofu texture becomes less creamy if frozen, but tastes fine and is
good for kids.
Serving suggestion:
Spoon into elegant, stemmed dessert goblet.
Place goblet on doily lined saucer.
Garnish with strawberry and mint leaf.
