Fudge
From: Melanie

I have the BEST recipe for fudge, but I have to give my mother
credit.
It's very easy to make, takes 5 minutes!
- 1 pound confectioner's sugar (or 4 cups)
- 1 cup cocoa
- 1/2 stick margarine
Put all ingredients into a sauce pot and on medium low heat (on an
electric burner, I use #4 or 5).
Mix well, and keep mixing to avoid scorching.
As you are mixing, add about 1/2 cup to 1 cup soymilk to liquefy the
sugar and cocoa.
Don't add too much milk or the fudge won't set, but if you don't add
enough the fudge won't be creamy.
You have to use your best judgement here.
When everything has melted and become mixed together, it should stir
and pour freely, but not be runny.
Then add:
- 1 cup walnuts for walnut fudge
- OR 1 cup peanut butter for peanut butter fudge
After it's all mixed up really well, pour into a lightly buttered/greased
pan.
Flatten, and refrigerate for a couple hours. Enjoy!
And let me know how you like it. |
