Lemon Mousse

serves 2-3
- 450 ml water
- pinch sea salt
- 3 tbsp agar flakes
- concentrated apple juice and/or malt syrup as sweeteners, to
taste.
- 1 tbsp finely grated lemon rind
- few drops vanilla essence (optional)
- 2 tbsp tahini
Bring the water to the boil, add all the ingredients and simmer for
10 minutes, until the agar flakes are completely dissolved.
Pour this mixture into a glass or ceramic container and leave to cool
and set (approx 1 - 2 hours).
Blend into a creamy consistency (either by hand or with a blender),
adding a little water or fresh apple juice if the consistency is too
thick.
Serve the mousse chilled or at room temperature. |
