Tofu Fruit

- 4 oz. tofu
- 1 small ripe banana
- 1/2 c. berries
- 1 large very ripe peach, peeled
- 1 c. diced ripe cantaloupe or other sweet fruit
- 1/3 c. fruit juice (apple, pineapple, grape, pear or other)
- 2 Tbsp. fruit juice concentrate (apple, pineapple or other)
Break up tofu into chunks; put in blender with rest of ingredients.
Puree until smooth.
Pour into shallow ice cube tray & chill in freezer 30 minutes.
Return to blender & puree until light & creamy.
