Whole Wheat Banana Bread

cooking time: approx.45 min
Preheat oven to 350

  • 1 1/3 cup whole wheat flour
  • 2 1/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup margerine/oil
  • 3/4 teaspoon grated lemon rind
  • 1 or 2 beaten egg substitute
  • 1 - 1 1/4 cup banana pulp
  • Nuts may be added if desired
  • 2/3 cup sugar may be added in with dry ingredients

1. sift together flour, baking powder, and salt
2. blend margerine/oil, lemon ring (and sugar) together
3. beat in egg/egg substitute and banana pulp
4. nuts can be added to the mixture as a last step
5. place batter in greased pan (bread pan). Bake approx. 45 minutes or until golden brown. stick a fork through the middle of the bread, if dough sticks to the fork-its not done
let cool before slicing. tastes delicious with nuts, and dried fruits.
