Bun (pronounced
"Boon") Style Rice Noodle Salad

A popular Vietnamese "salad" served here by Hmong-owned
restaurants
- Rice noodles
- cucumber, julienne strips
- bean sprouts (fresh, raw)
- crushed peanuts
- lime juice
- julienned carrot strips
- fresh cilantro
- fresh basil leaf
- broth
- red pepper flakes
- mint leaves
- chopped lettuce
- Caramelized sweet onions (optional)
Cook and drain the rice noodles.
Arrange the bean sprouts and chopped lettuce in the bottom of a
LARGE bowl.
Add drained noodles.
If using, add warm caramelized onions.
Over them, arrange the carrot strips, next to them the cucumber
strips, and them the cilantro and finally basil and mint leaves.
Mix the red pepper flakes, broth, and the juice of one lime.
Pour over noodles. Garnish with crushed peanuts.
