The following is from "Kathy Cooks" (copyright 1989)
- 8 oz. dried bean curd (yuba) sticks (carried in larger Oriental
marts - inexpensive)
- 1/4 C nutritional yeast
- 1/4 C peanut butter
- 2 Tbsp. miso
- 2 Tbsp. warm melted margarine
- 2 tsp. paprika
- 2 C barbeque sauce
Soak the dried bean curd 4-6 hours or overnight in hot water.
Drain and cut sticks into 4-6 inch lenths.
Squeeze out excess water and drain.
Preheat oven to 350 degrees.
Oil cookie sheet.
In a large mixing bowl, mix next 5 ingredients together to form
a smooth paste.
Toss yuba sticks in and mix until all sticks are evenly coated.
Lay side by side (touching each other) one layer thick, on the cookie
sheet.
Bake 25 minutes or until the bottoms are brown and crisp.
Remove from oven and put in mixing bowl with barbeque sauce.
Toss well. Lay out on baking sheet again and bake at 350 degrees
for 10-15 minutes.
(5-6 servings) Messy and good.
