Maltese cookbook cooking time appx. 30min. side salad or appetiser
- 400g butter beans
- 4 garlic cloves crushed
- tablespoon olive oil
- salt & pepper to taste
- chopped parsley (generous amount)
Soak the beans overnight.
In a saucepan cover the beans with water and bring to the boil.
Simmer the beans gently till cooked.
From time to time you might need to add hot water so as to prevent
the beans from drying.
When the beans are ready drain them. Mix the beans with olive
oil, garlic, chopped parsley and salt and peper and serve cold.
