Fresh Tomato
Soup (Frusche Tomatensuppe - German)
6 medium sized tomatoes or about 2 pound Italian plum tomatoes
1 onion, chopped
1 stalk celery, chopped
2 cups broth or water
1 tablespoon tomato paste
1/2 teaspoon dried basil
1/4 teaspoon freshly ground pepper
1/2 teaspoon salt
Cut tomatoes into thin wedges and place in 1 1/2 quart saucepan
with all ingredients.
Simmer uncovered for 30 minutes.
Strain to remove tomato skins and seeds.
Adjust seasonings. Serves 4-6
