Garlic Rice

Recipe can be doubled - original serves 4 - don't remember origin
- but was given to me by my cousin in Vermont several years ago.
- 1/4 cup olive oil
- 4-6 cloves fresh, chopped garlic
- 1/4 to 1/2 cup apple cider vinegar (depending on taste)
- 1 Cup uncooked rice
- 1-1/2 cups water
- salt and pepper to taste
Have electric burner on MEDIUM - gas burner on MEDIUM TO LOW FLAME
- Do not let burn.
Place olive oil in nonstick skillet - just til melted - add garlic
- saute for 2 minutes tossing with wooden spoon - add uncooked rice
tossing with wooden spoon - saute 2 minutes stirring constantly.
Then, add vinegar and saute 2 minutes.
Add water, cover and put on LOW for 15-20 minutes, til tender.
Especially good as main course with freshly-baked bread of your
choice and green salad with light vinaigrette-almond dressing.
