Potato Pancakes

- 6 medium potatoes
- 2 small onions, finely chopped
- 4 stalks celery
- 1 cup wheatgerm
- Half cup soya flour
- 2-3 tbsp wholemeal flour
- salt and pepper to taste
- Soy milk
Grate potatoes (uncooked) in a shredder.
Mix grated potatoes and other ingredients together in a large bowl.
Add extra soya flour if needed to make the mixture firmer, then shape
into patties about 1.5cm thick.
Bake at 375*F for 15 20 minutes or fry until golden brown.
Delicious with a salad.
As an alternative, fried pumpkin fritters are a delicious modification,
and can often tempt a child to eat the much underestimated pumpkin!
Simply exchange the grated raw potato for a similar quantity of
mashed, cooked pumpkin.
Prepare and serve in the same way.
