Roasted
Roots

One or more of the following:
- Red potatoes
- Sweet potatoes
- Rutabagas (really! If they're waxed, peel them)
- Carrots
Cut into inch or so cubes.
Place in roasting pan, one layer deep.
Then sprinkle with either thyme or cumin, and sea salt.
Drizzle a little (maybe a tablespoon) olive or other veggie oil on
them
Put them in a 375 degree oven, and stir them every 15 minutes
or so.
They're done when they're fork-tender...or when they're they way
you like them.
