Scheese - hors d'oeuvre
This is a starter with SCHEESE a vegan soy based cheese available
in the UK and Germany.
Any other vegan hard cheese is fine, too.
You can use the marinade in many ways, not only for the SCHEESE.
- 1 SCHEESE - Gouda or Mozzarella style
- 1 little jar of pickled paprika (red pepper) - whole pieces
- 2 heaped teaspoons of tomato puree
- 2 garlic cloves - crushed
- 1 tsp garlic powder
- 1 tsp dried dill
- 1 tsp dried marjoram
- 1 tsp dried chervil
- 1 tsp dried thyme
- 1 tsp dried lovage
- 1 bay leaf
- Soy oil (take sufficient oil, the SCHEESE has to be covered)
- salt and pepper to taste
For the marinade let drain the pickled pepper then remove the seeds
and the bitter parts of it.
Give all the herbs, the garlic, the paprika, and the soy oil to the
mixer and puree thoroughly.
Salt and pepper to taste.
If necessary add some more oil. Add the bay leaf.
Now cut the SCHEESE loaf in little pieces (like a cake would be
cut) and cover them with the marinade.
Let marinate for 2-3 days. Stir occasionally.
Serve on little plates, the SCHEESE pieces surrounded by 2 tablespoons
of the oily marinade and garnished with blue olives on a wooden
spit.
This is an impressing starter for your new years eve dinner table.

The following are recipes and ideas for "SCHEESE", a vegan cheese
available in Europe esp. England, by Bute Island Foods.
GREEK SALAD
Cut marinated tofu and "Cheshire" into small cubes.
Add 1 little leek, cut in small rings, and stoned black olives.
Vinegar, oil, salad herbs, some pepper and garlic to taste.
You can also add paprika pieces and onion rings.
ITALIAN PLATE
Cut "Mozzarella" and tomatoes into slices.
Layer tomatoes and "Mozzarella" slices alternately onto a plate,
sprinkle the tomatoes with salad spices, herbal salt and a bit pizza
spice.
Give some fresh basil leaves on it and sprinkle all with oil and
lemon juice.
Garnish with parsley and let marinade a while before serving.
WHITE "CHEESE" SAUCE
Heat up 1/2 l soy milk with some herbal salt and pepper.
Add 1 - 2 Tbsp margarine.Gradually stir in the half of a coarse
ground "Gouda".
Watch out that the sauce doesn't get lumpy.
If the sauce gets too thick, add some soy milk.
Nutmeg to taste (optional).
Goes with broccoli, cauliflower, and pasta of course.
BAKED "CHESHIRE"
Make a viscous dough out of flour and soy milk or water.
Add a bit herbal salt to it. Cut the "Cheshire" crossways into two
halves.
Cover the halves with the dough and bread them.
Now fry them in oil on both sides.
STUFFED "CHEESE" COOKIES
Knead a smooth dough out of 250 g flour, 150 g margarine, 3/4 of
a ground "Gouda", salt, pepper and caraway.
Place the dough at a cool place and let rest for a while.
Now roll out the dough, cut out circular cookies and bake them till
golden brown.
In the meantime mash the rest of the "Gouda" and mix it with 4 Tbs
soya milk and 2 Tbs chopped nuts.
Stir the mixture till you get a creamy stuffing.
Now fill 2 cookies each, with the cream.
"CHEESE" STRAWS
Make a dough out of 200 g flour, 3/4 "Gouda" and 200 g margarine.
Roll out thick,cut into small strips and spread soy milk on it.
Sprinkle with herbal salt.
Additionally sprinkle either with pizza spice or "Parmazano" (the
vegan one by St.Giles foods) or poppy seeds or paprika powder.
Bake it on a wet baking tray till golden brown.
