Sliced Potato
Roast

- 4 potatoes, large
- 3 tbs oil
- 2 tsp rosemary
- 1 onion or leek
Thinly slice the potatoes.
Pour 1 tbs oil over base of oven dish and lay half the onion rings
or leeks in the dish.
Add layers of potato, sprinkling rosemary or basil between each layer.
Pour 2 tbs of oil over potatoes and spread the remainder of the
leeks/onion rings over the top.
Bake at 250 degrees C for 45 minutes covered with foil, then 15
mins uncovered.
