I learned this from my husband,and it is a perfect complement to
falafel.
- About two cups of plain white vegan yoghurt (eg Yofu)
- about five cloves of garlic, more or less to taste
- salt
- water, just enough to thin the mixture slightly (perhaps a half
a cup)
- A cucumber. English cucumbers, or a burpless variety work best..
Chop the garlic as fine as possible.
Peel the cucumber, and cut into small pieces.
Dump this into the yoghurt, add the water and the salt. MMM!
Obviously we don't really measure things at our house.
If desired you can skip the garlic and add mint and more water to
make a yummy Turkish soup. Enjoy
