Foole Moudammas
(fava bean dish - Middle East)

gleaned from a restaurant in Jerusalem
- fava beans (cooking time very long, best to use canned cooked
ones, in USA Progresso makes them) - 1 can
- 1 tsp salt
- 2 garlic cloves, mashed
- 1/4 cup lemon juice
- fresh parsley
- virgin olive oil
Cook (or bring to a boil) fava beans, draining most of the water.
Add salt, garlic, lemon juice and bring to a boil.
Mash beans slightly if desired.
Serve with fresh chopped parlsley (plenty is tasty!) and olive
oil (1-2 tbsp mixed in, then about 1 tbsp poured over the final
mixture).
Variations with scallions, cumin, tomatoes added to the cooking
mixture (I did not find that they improve the taste).
