- 1 cup lentils
- 4 cups vegetable broth
- 1 1/2 Tbl. chopped onions
- 2 cloves garlic, finely chopped or pressed
- 2 plum tomatoes, chopped
- 2 small white boiling potatoes, diced
- 1/4 cup chopped carrots
- 1 6 oz. can tomato paste
- 2 tsp. sugar
- salt & pepper to taste
Cook lentils, 1 1/2 cups water, onions and garlic in large pot over
medium heat for 20 minutes.
Add tomatoes, potatoes and 1 cup water and cook 15 minutes.
Add carrots, tomato paste, sugar and remaining water.
Simmer covered until vegetables are cooked, 15-20 minutes.
Season with salt and pepper as desired.
If your family likes cayenne, a couple pinches adds a nice touch.
