Roasted Garlic Chickpea Puree

For the person who was seeking a hummus recipe earlier in the week,
here's the recipe for hummus that was in the food section of our
regional newspaper this week.
- 2 cups soft-cooked garbanzo beans
- 1/4 cup roasted garlic (see Note)
- 1/4 cup tahini (sesame paste)
- 2 tablespoons lemon juice or more to taste
- 1 teaspoon olive oil
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon coriander
- 1/4 cup fresh parsley
- Salt and black pepper to taste
Combine all ingredients in a food processor and process on medium
high until smooth and creamy in texture.
Taste and adjust seasoning according to preference.
Note: One elephant garlic bulb will yield just the right amount
of roasted garlic for this recipe.
This extra-large garlic is slightly sweeter than its smaller counterpart,
but is perfect for this recipe.
To roast, trim the top of the bulb; do not seperate cloves.
Drizzle with olive oil and bake for 15 to 20 minutes at 350 degrees.
Test with a wooden pick to ensure softness and then allow to cool
before proceeding with the recipe.
