Carob Pudding

Serving Size: 1
- 1 cup cashews, raw
- 1/3 cup carob powder
- 3/4 cup honey or dried dates
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 5 tablespoons corn starch (or 3/4 cup rice flour)
- 4 cups water
Blend 1 cup cashews with one cup water for 2 or 3 minutes.
Add one more cup water and blend a few minutes more.
Add all the rest of the ingredients except the rest of the water,
with the blender running. Blend until well mixed.
Pour the mixture into a large sauce pan.
Add two more cups of water.
Cook over mediup heat, stirring constantly, until pudding is
thickened.
Pour into a prebaked pie shell or into serving dishes and refrigerate.
Serve chilled with tofu cream or cashew cream.
If you have a Vitamix, boil the four cups of water and blend
until thick.
You will not have to cook the filling.
NOTES : I use maple syrup in the pudding.
I also have sometimes used cocoa powder for chocolate pudding.
