Pumpkin
Pie
(adapted from a PETA recipe)
Process thoroughly:
1 1/2 packages soft silken tofu (about 16 ounces)
1 15 oz can pumpkin puree
3/4 cup sugar or granular equivalent
1/2 tsp salt
1 3/4 tsp pumpkin pie spice
(OR: use a bit larger quantity of spices in pumpkin pudding
recipe)
Pour into 9" piecrust.
Bake 375 degrees for 60 to 75 minutes,
or until a toothpick inserted in the center comes out almost clean,
or until it looks firm and is cracked in the center.
