I like this recipe for dal, a traditional Indian dish using lentils.
- 1 C lentils
- 3 C water
- 2 C finely chopped onion
- 1 t olive oil
- 2 cloves garlic, finely chopped (I usually use 3 or 4)
- 1 t curry powder
In a medium saucepan, combine the lentils, water, and 1C of onion.
Bring to a boil; reduce the heat, cover the pan, and simmer until
the lentils are tender, about 30 minutes.
While the lentils are cooking, heat the oil in a nonstick skillet;
add the remaining 1C onion, garlic, and curry.
Saute the vegetables on medium or medium-high heat, stirring occasionally
until they are golden, soft, and just beginning to brown, 10-15
minutes.
Add the onion mixture to the cooked lentils, stirring to combine.
Heat the lentil mixture for a few minutes longer.
Salt to taste.
Serves 4.
