In a heavy kettle, sauté the onions and garlic in oil [or water] until
the onion starts to turn golden, then stir in the salt and spices
and continue to cook another minute.
- 2 large onions -- chopped
- 4 cloves garlic -- minced
- 2 tablespoons oil [or 1/4 cup water]
- 1 teaspoon salt
- 1 teaspoon turmeric
- 2 teaspoons cumin seed
- 2 teaspoons coriander powder
- 1/2 teaspoon cayenne
- 2 cups lentils -- rinsed
- 5-6 cups boiling water
Add the lentils and boiling water (start with 5 cups), then cover
and simmer 1 hour, until the lentils are tender.
Stir occasionally while cooking.
If the mixture becomes too dry, add additional water.
