This palav consists of a lovely combination of rice
and spinach, mixed with herbs and spices.
Serves 2 - 4 for lunch
- 1 cup Basmati rice ( available in Indian stores)
- 1/2 cup chopped spinach - preferably fresh , washed
- 5- 6 carrots - washed and diced into small pieces
- 1-1/2 cup water
- 1/2 tsp salt
- 2 tblsp vegetable oil
- 4 cloves
- 1/4 tsp cinnamon
- 1/4 tsp cumin seeds
Wash the rice under flowing water , to remove any
dust etc.
Keep a heavy and large skillet on heat and add 2 tblsp vegetable
oil to it.
When the oil becomes hot, add cloves, cumin seeds and cinnamon
and fry for 1 minute.
Then add the chopped spinach and carrots and fry for 2- 3 minutes
until the spinach is cooked.
Now add the rice, water, salt and stir well.
Bring the palav to a full boil and then lower the heat, cover
with a close-fitting lid and cook for about 20 - 25 minutes.
Turn off the heat and let the rice stand for 5
minutes.
Fluff lightly and transfer the palav to a serving platter.
