Rice Curry

I got this recipe from a Maltese friend. It serves
4-6. It takes 1.5 hours to make. Serve with a good bread.
- 1 small onion, chopped
- 2 T. Olive oil
- black pepper to taste
- 6oz. Tomato Paste
- 2 cloves garlic
- 1 T. Curry Powder
- 15oz. tomato sauce
- 8oz. canned sweet peas
- 4-6 servings of cooked rice
Saute the onions and garlic in hot oil until translucent.
Add the curry powder and pepper. Add tomato sauce, paste and water.
Mix well. Simmer for about one hour, stirring occasionally.
Add peas without liquid. Stir well and simmer another
half hour, stirring occasionally.
Prepare rice according to directions on the packet.
Spoon rice onto plate, spoon sauce over the rice.
Adjust amount of garlic and curry to your preferences.
