Potato &
Green Peas Curry

This consists of a great combination of potatoes and fresh green
peas in a spicy sauce.
It can be prepared in about 30 minutes, once the ingredients are
all arranged.
This curry goes very well with spiced cauliflower palau.
Both of them can be prepared for a formal lunch for 4-6 people.
- 3 large red potatoes - washed, diced into 1 inch cubes
- 2 medium-sized onions - diced
- 1 medium-sized tomato - diced
- 3 tblsp vegetable oil
- 2 tsp salt
- 2 green chillies - minced
- small piece of ginger
- ½ tsp garam masala powder
- ½ tsp cumin powder
- ½ tsp black pepper
- ½ tsp mustard seeds
- 10-12 cut, cleaned cilantro leaves
Cook the diced potatoes and green peas until they are tender.
In a blender, add the diced tomato, salt, chillies, ginger,
garam masala, cumin powder, pepper and mix well.
Keep a heavy skillet on heat, add 3 tblsp vegetable oil.
When the oil becomes hot, add mustard seeds.
Keep a lid handy, since the mustard seeds will sputter.
Then add the blended mixture and fry for 2 minutes.
Now, put the cooked potatoes and peas and mix well.
Let the curry cook for 6 - 7 minutes, until it becomes a little
thick.
Remove from heat and transfer to a serving bowl.
Garnish with cilantro leaves and serve hot with rice or rotis.
