Curried
Red Lentil Pate

Here's a great lentil recipe. It may be called a pate, but it
slices easily and is quite tasty. This recipe comes from "The Natural
Health Cookbook"
- 1/2 cup + 2 TBS bread crumbs (cubes are ok)
- 1 cup red lentils, uncooked
- 2 tsp olive oil
- 1 cupp diced onion
- 1/2 carrot, diced
- 1 cp diced celery
- 1 cup diced zuuucchini
- 2 tsp minced garlic
- 2 tsp cuurry powder
- 1/2 tsp dried basil
- 1/2 tsp dried thyme
- 1 tsp sea salt
- 2 tsp prepared mustard
- 3 TBS minced fresh parsley
Optional ingredients: 2TBS capers or 3 TBS diced black olives or 3
TBS diced pimentos or 3TBS roasted red peppers.
Preheat to 350. Oil a 9 inch baking pan or loaf pan an coat it
with 2 TBS of the bread crumbs. Cook lentils in 2 cups water about
30 minutes. Heat oil in large skillet and add the onion, carrot,
and celery. Saute 3 to 4 min. Add the zucchini, garlic , curry powder,
basil, oregano, thyme and salt. Cook 3 to 4 min. Add the cooked
lentils, mustard, parsley and remaining 1/2 cuup of the bread crumbs.
Add optional ingredients if you wish. Stir to combine. Spoon into
prepared pan. Cover with foil or parchment paper and bake 25-30
minutes, when knife comes out clean.. Allow to col before slicing
