Scrambled
Tofu Curry

Tried my hand at this for the first time last night, and then
again this morning. (I used too much cayenne pepper the first time!)
- 1/2 lb extra firm tofu, drained & pressed for 15 minutes
- 1 tsp salt
- 1 tsp cayenne pepper
- 1/2 tsp turmeric
- 1/4 tsp asafoetida (optional, since there are onions)
- 1 small onion, chopped
- 1/4 cup frozen peas
- 1 Tbsp oil
- 1/2 tsp butter (optional)
I ground the salt with the spices and mashed up the tofu while I sauteed
the onion in the oil+butter at high heat. Once the onions had begun
to brown, I added the tofu, peas, salt and spices and stirred until
the tofu was coated in spice and oil. I reduced the heat to medium,
and turned the mixture infrequently for about ten minutes. |
