Tangy Potato

This is a tasty and satisfying snack, basically made using boiled
potatoes.
In India, snacks form an integral part of everyday life.
There are various kinds, ranging from deep-fried to lightly-sauteed
and have an incredible taste range.
This dish is not deep-fried, so it is quite healthy to be eaten
regularly, if it satisfies your taste-buds.
This dish is very simple to make and is quite delicious.
- 5 medium-sized potatoes
- 6 tblsp Tamarind extract (which is available in any Indian store)
- 2 tsp vegetable oil
- 1/2 tsp cumin seeds
- 1/2 tsp ginger powder
- 1/4 tsp chilli powder
- 1/2 tsp black pepper
- 1/2 tsp sugar
- 1/4 cup plain water
- 1/2 tsp salt
- 10 cleaned and cut cilantro leaves -- for garnish
Wash and clean the potatoes thoroughly.
Then boil the potatoes in a large saucepan with enough water.
This is usually done until you can pass a fork through the potatoes
easily.
Then remove the potatoes from the heat and empty the hot water from
the saucepan.
Fill it up with cold water so that the potatoes cool down.
Peel the potatoes and cut them into 1/2 inch cubes and keep aside.
In a small frying-pan, heat 2 tblsp vegetable oil and add cumin
seeds.
Fry until they become brown.
Then add tamarind extract, sugar, ginger powder, black pepper, chilli
powder, salt and water.
Cook this tangy mixture over low heat for about 10 minutes, until
the mixture becomes slightly thick.
Remove mixture from heat.
Transfer the cut potatoes into a serving bowl, pour the tangy
juice over it and mix thoroughly.
For garnish, add a few cut cilantro leaves over the mixture.
