Spinach & Potato Stir-Fry

Here, chopped spinach and diced potatoes make a very tasty combination.
Fresh green peas can also be added to the above vegetables.
They can be made as a side-dish to be eaten along with rice or rotis.

  • 1 cup chopped spinach
  • 2 medium-sized potatoes - diced
  • 1 small green chilli - minced
  • ¼ tsp mustard seeds
  • ¼ tsp cumin seeds
  • ½ tsp black gram ( usually called 'urad dal' , available in Indian stores)
  • 1 tblsp olive oil
  • 1 tsp salt
  • ½ tsp dessicated coconut powder
  • cilantro leaves
Keep a medium-sized skillet on heat, add 1 tblsp olive oil.
When the oil becomes hot, add mustard seeds.
When they are done, add minced chilli, black gram and cumin seeds and fry for 1 minute.
Now, add the chopped spinach & diced potatoes and cook for 4 minutes, until the potatoes become a little brown.
Put salt and coconut powder and mix well.
Cook over low heat for another 15 minutes until the vegetables are done.
Remove from heat and garnish with cilantro leaves.
Serve hot with rice or rotis.
