Wash the okra and dry on absorbent kitchen paper. Cut off the stalks
and slice the okra in half lengthways.
- 1/2 Pound Okra
- 1/2 Teaspoon Paprika
- 1/2 Teaspoon Chilli powder
- 1 Teaspoon Mango powder (amchur)
- 1/2 Teaspoon Ground ginger
- 4 Tablespoons Oil
Mix together the spices and salt. Stuff the okra with the spice
mix and leave them to stand in a cool place for at least 30 minutes.
Heat the oil and fry the okra for about 4 minutes, turning carefully
to cook on all sides
