Zucchini

serves 4
- 1 large diced Onion
- 4 large cloves of crushed garlic
- oil to cook
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/2 tsp tumeric
- 1 green pepper
- 2 large sliced sticks of celery
- 4 cups quartered zucchini
- 4 large tomatoes (preferably put through blender)or 1 tin pureed
tomatoes)
- 3 TBLS good curry powder
- 1/2 tsp mango powder
- 1 tsp salt
- 1 green chilli
1. Put seeds and tumeric in oil, when they start to pop, add onion
and garlic.
Fry until glossy.
2. Add green pepper and celery.
Fry on medium heat for 10 min.
3. Add zucchini and fry for 10 min
4. Add tomatoes and the remaining ingredients
5. Cook for 20 min and add water if necessary
Serve with brown rice or cous cous
