baked sweet potato

Caribbean recipe.
This one sounded odd to me, at first, but it is DELICIOUS!
Bake a sweet potato -- oven or microwave
Split it open and top with this chile concoction:
Use whatever chile you like, even canned. When you heat it,
mix in:
- 1 can black beans
- 1 can mexican spiced diced tomatoes (with jalapeno bits)
Top the baked sweet potato with the chile mix,
then add a dollop of vegan sour cream type topping.
Okay, people think, "SWEET potato?" I did too.
