Virgin-Islands Spiced Salt
This is from "Herbs and Spices the Cook's Reference" by Jill Norman. Use to rub over food before grilling or roasting - a healthier version might use less of the salt and more of the other ingredients.....
SERVES 10
- 3 tablespoons sea salt
- 2 teaspoons black peppercorns
- 1/4 teaspoon whole cloves
- 1/2 teaspoon grated nutmeg
- 1/4 teaspoon dried thyme
- 2 fresh garlic cloves, crushed
- 1/2 small onion, chopped
- 2 sprigs fresh parsley
Grind all the ingredients in a mortar or food processor until well mixed.
Store in the refrigerator. |
