I think of this as a main dish. It's certainly hearty!
- 3 cups water
- 1 bouillon cube
- 1 cup quick pearled barley
- 2 Tablespoons vegetable oil
- 1/2 cup chopped onion
- 1 (10-oz) pkg. frozen peas
In large saucepan, bring water and bouillon cube to a boil.
Stir in barley; reduce heat.
Cover; simmer 10 to 12 minutes or until tender, stirring occasionally.
Drain.
In large skillet, heat oil.
Cook onion and frozen peas in oil about 5 minutes; reduce heat.
Add cooked barley; mix well.
Continue cooking over low heat until heated through, stirring
occasionally.
Serves 6.
