Here's a recipe for homemade Gluten (aka Seitan).
You can also buy it prepackaged in some areas.
- 1 c Instant gluten flour or "vital wheat gluten" (NOT just regular
high gluten flour -- it's just gluten powder)*
- 1 c water
Stir gluten powder & water together, adding more water if necessary.
You want a nice thick dough.
Knead to make the gluten elastic and squeeze out the excess water.
Break in small (1") pieces and simmer in a vegetable broth at least
1/2 hour.
Note: The longer you knead and simmer the gluten, the tougher it will
become, so you can pick your own texture.
You can add seasonings to the gluten flour to make a more savory-flavored
product.
Also experiment with simmering the seitan in varying broths for
extra flavor.
* Seitan can also be produced starting with whole high-gluten
flour (see rec.food.veg.cooking; full instructions were there not
too long ago -- also where I got these instructions on using gluten
powder) -- but you start with the likes of 10 cups of flour and
after rinsing end up with about 1 cup of gluten.
Beginning with pure gluten powder is a bit easier if you can get
it.
I buy it bulk at the health-food store.
According to _Vegan Vittles_ by Joanne Stepaniak (this cookbook
has lots of seitan and soy recipes and "substitutions") , gluten
