Lemon and
Pistachio Rice

I always approximate the amount of ingredient - adjust quantities
according to no. of people and preference of ingredients, never
be afraid to experiment!!
- Onion, chopped
- garlic, crushed
- rice, washed
- green beans, trimmed & chopped in half
- carrots, thinly sliced
- plenty of lemon juice
- pistachio nuts
- celery salt
- Cumin
- chilli powder or fresh chillis
Cook rice separelty in salted water
Meanwhile, fry onion and garlic until soft
Add green beans, carrots, celery salt, cumin and chilli powder (or
chopped fresh chillis) fry for about 10 minutes on lowish heat.
Add pistachios, fry for further 5 mins
Add rice to pan and mix thouroughly over medium heat.
Add lemon juice, continue to cook for further 5 mins
taste - add anything extra you think it may need
serve - and enjoy!
The beans and carrots in this recipe should retain their crunchiness.
