Vegan au
Gratin Casserole

Made this recipe up myself with a few simple ingredients I had
on hand.
Easy and so good.
- 1 med zucchini or yellow summer squash
- 1 large tomato
- 1 average size potato
- 1/4 to 1/2 cup grated vegan cheddar type cheese (I like brown
rice milk cheese)
- 1 to 2T vegan margarine or olive oil
- vegetable oil to oil casserole
- s&p to taste
Oil a small casserole, I think the one I use holds 1/2qt.
Slice the zucchini thinly, and layer 1/2 of it in casserole dish.
Slice potato thinly, layer that over zucchini.
Either place a few small dabs of vegan oleo or drizzle a few drops
olive oil on potato layer.
Slice or chop tomato, layer on potato.
Sprinkle with vegan cheese, then slice zucchini over all as top layer.
Bake at 350f for an hour, covered except for last ten minutes.
Oil or margarine can be omitted.
I once tried crumbled tofu in it.
It wasn't bad, but I like it with just veggies best of all.
For some reason this simple combination of vegetables is very delicious.
