Chickpea and Spinach Stew

Made up recipe - really tasty, quick & easy.
- 1 small onion
- 1 clove of garlic
- olive oil for frying
- cooked, drained spinach (add prefered amount, I personally like
lots but not everyone is as much of a spinach fan as me)
- 1 can chickpeas
- 1 can tomatoes (or however many fresh ones - note extra liquid
may be needed if using fresh)
- 1 red pepper
- 1 green pepper
- 1 tbs peanut butter (crunchy is best)
- 1 tbs tomato puree
- salt & pepper
Chop onion, garlic and peppers and fry in saucepan until soft.
Add tomatoes, spinach and chickpeas to pan.
Heat over moderate heat for a few minutes.
Stir in tomato puree and peanut butter and cook until it looks
yummy (about 10 mins).
(Add small amount of water whilst cooking if not liquidy enough)
Add salt & pepper to taste and serve with rice or even better
cous-cous.
Variations: Try adding different vegetables to make more bulky
or replacing the chckpeas with different pulses.
