Protein Veggie Delight

- 1 small cup tofu pieces
- 3-4 cups chopped spinach
- 2 large onoins chopped fine
- 2 large potatoes
- 2 small cups peas - if frozen, bring them to room temperature
- 2 small cups corn - if frozen, bring them to room temperature
- 2 small tomatoes fine cut
- 1 tbsp wheat flour
- 2 green chillies - cut
- 1" piece ginger - cut in fine pieces
- 1 tsp. lemon juice
- 1/2 tsp knoblauch
- 172 tsp paprika powder
- 1 tsp. cinnamon-clove powder
- 2 tsp cumin seeds (good for tofu digestion)
- 2 1/2 tbsp. vegan margarine
- Pepper to taste
- Salt to taste
Put the washed spinach in a pan, add 1 cup water and a pinch of salt.
Cover and boil over a high flame for 2 minutes. Cool quickly, or hold
under running water in a colander.
Put in a mixie, add green chilli, knoblauch, ginger and run for a
minute. Keep slightly coarse, do not make very smooth.
Keep aside.
Cut the potatoes into square pieces all sizes approx. equal.
Heat 1 tbsp butter and first add the soya chunks, next potatoes, peas,
corn, cook for 5 mins.
Pour this mixture in another bowl and keep aside.
In the same hot pan, add 1 tbsp margarine, now add the cumin seeds.
Add the chopped onions and fry till very tender / transparent color
Add the tomato and further fry for two minutes.
Add the cinnamom-clove powder, paprika powder (as per state) and fry
till tomatoes turn soft.
Add spinach gravy and potatoes, peas, corn and soya mixture, kept
aside earlier
When it resumes a boil sprinkle the flour, stir well, not to form
lumps. Boil for 5-7 minutes. Add lemon juice
Add salt and pepper as per your taste
Just before serving heat half tbsp margarine in a tiny saucepan and add
the cumin, let it crackle.
Now, pour this over the vegetable and mix gently.
Serve hot with bread, rice, baguette
This proportion will serve approx 6 people
Cooking time : 45 mins
Depending on the what all is available, you may want to add more peas,
less potatoes, more corn etc etc.
Benefits : Tofu adds protein value, potatoes, peas and corn make it a
very filling veggie
Soya milk can also be added instead of water to cook the spinach if you
do not have tofu /soya chunks.
