- 20-30 small/ medium fresh mushroom
- bread crumbs
- spinach
- soy sauce
- green onions
- celery
- soy oil
- garlic - chopped
Clean and separate mushroom caps from stems. Save stems for later.
Place caps in shallow baking dish and drop a small amount of butter
or soy oil and soy sauce in caps.
Place in oven at about 350 degrees to soften.
Chop and blanch spinach with small amount of water until dark green.
Drain.
In same pan, (with little spinach broth left) add chopped garlic and
oil to sautee.
Chop green onions and add to garlic and spinach broth.
Chop mushroom stems and add to sauteed mixture
Chop celery and add to sauteed mixture.
Let cook for 10 minutes.
Add bread crumbs to cover mixture and create enough stuffing for the
mushroom caps.
Add water and soy sauce to loosen and flavor.
Fill mushroom caps with stuffing and rebake at 350 degress for 10-15
minutes (until stuffing gets brown).
Serve warm. Serves: 4. Preparation time: 25 min
