Winter
Vegetable Stew
- 1 good sized rutabaga
- 3 turnips
- 3 - 4 carrots
- 1 sweet potato
- 2 - 3 white potatoes
- 1 large onion
- 1/2 cup barley, rinsed well
peel and cube all, put into a large stew pot or dutch oven, add water
to cover.
Let simmer for an hour or so, until all is nearly tender.
Add:
- 1/3 cup red lentils and 1 teaspoons dry thyme.
simmer until the lentils have cooked and fallen apart and thickened
the stew.
Add more water if required.
Add salt or veggie broth powder to taste and lots of freshly ground
black pepper.
Serve. Makes a hearty, comforting winter stew.
Obviously, add or delete any veggies you prefer or dislike.
